Fish Brine for Lake Trout
We love to smoke Lake TroutFish brine we use fine chopped onioncrushed garlic1/4 bottle of lemon juice1 cup of salt (pickling/course)Tabasco to taste1/2 cup brown sugar2 dash Worcester sauce20 cups or 1 gal of water soak fish overnight and smoke in the morning. Our Favorite Walleye Fish Batter 3/4 cups flour2/3 cups water1 teaspoon double-acting baking powder1 teaspoon season salt mix dry together and add water to thick pasteadd patted dry fish fillets and coat evenlycook in hot oil for larger group we use 4x the mixture.
