Fish Brine for Lake Trout

We love to smoke Lake Trout
Fish brine we use

fine chopped onion
crushed garlic
1/4 bottle of lemon juice
1 cup of salt (pickling/course)
Tabasco to taste
1/2 cup brown sugar
2 dash Worcester sauce
20 cups or 1 gal of water

soak fish overnight and smoke in the morning.
